Eggplants are known to have a variety of health benefits, which could be beneficial to your little one's health. It contains vitamin B6, which helps promote healthy brain development, and fibre, which is necessary for our little ones digestion.
You can introduce eggplants as soon as your baby is ready to start eating solids, which is usually around 6 months of age. Toddlers are not naturally interested in eating eggplant due to its bitter taste but this Eggplant Spread Recipe might change their mind.
Ingredients (serves 2-3 portions)
Instructions:
1. Peel and chop the eggplant then steam for 15-20 minutes until soft.
2. Blend with the yogurt, tahini, lemon juice and olive oil.
3. Add a pinch of salt and garlic powder to taste. (this step depends on your baby's age and taste preference)
